Elote (Mexican Street Corn)
Grilled corn with mayo, cheese, and chili
Ingredients
- 4 ears of corn
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 tsp chili powder
- 1 lime, cut into wedges
- Fresh cilantro
Instructions
- Grill corn until charred on all sides
- Mix mayo and sour cream
- Brush corn with mayo mixture
- Roll in cotija cheese
- Sprinkle with chili powder
- Squeeze lime over top
- Garnish with cilantro
